| Ingredients: 1 large chayote 2 tbsp ghee or sunflower oil 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1/2 tsp curry powder Salt and pepper to taste 1/2 cup chopped coriander leaves |

Heat ghee and add mustard and cumin sees. When mustard seeds start to pop, add curry. Mix well and add chayote, sauteeing until very tender (10+ mins.).
Add salt and pepper to taste.
